Maftoul is a traditional Palestinian grain, similar to cous cous and made from bulgar and whole wheat flour. A distinctly nutty flavour makes it a brilliant alternative to other grains such as cous cous and rice and works well in salads, tagines, soup or pilafs.

How to cook: simply rinse the maftoul in cold water and bring 400ml of stock or water to the boil, add the maftoul and simmer for 12-15 minutes.
