How to cook: simply rinse the maftoul in cold water and bring 400ml of stock or water to the boil, add the maftoul and simmer for 12-15 minutes.

Ingredients: Bulgur Wheat, Wholemeat Wheat, Flour, Salt, Water.

Maftoul (meaning 'hand-rolled') is prepared by women today just as their grandmother's have always done, working together to crack, hand-roll and dry the organic wheat in the glorious Palestinian sun.
